Definition: Graph showing bacterial population growth over time under favorable conditions. Four phases: lag, log (exponential growth), stationary, death.
Temperature Danger Zone: 5-60°C – rapid bacterial growth occurs. Goal of cold chain is to keep food below 5°C (and ideally below 4°C) to minimize bacterial growth.
Why It Matters::
- Every hour in temperature danger zone increases bacterial load
- Temperature excursions significantly increase food safety risk
- Proper temperature control is primary defense against foodborne illness
